Sautéed Spinach

Ingredients
  • 1 lb fresh spinach (baby or regular)

  • 1–2 tbsp olive oil or butter

  • 2–3 cloves garlic, thinly sliced or minced

  • Salt, to taste

  • (Optional) Squeeze of lemon juice or pinch of red pepper flakes


Instructions
  1. Prep the spinach: Rinse the spinach thoroughly and shake off excess water

  2. Heat the pan: In a large skillet, heat the olive oil (or butter) over medium heat.

  3. Add garlic: Sauté garlic for about 30 seconds, until fragrant but not browned.

  4. Add spinach: Add the spinach in batches, stirring as it wilts. It will shrink dramatically in volume.

  5. Season: Once wilted (2–3 minutes), season with salt. Toss to combine. Serve immediately.


Chef Notes:

  • Add a squeeze of lemon juice or sprinkle of red pepper flakes for brightness and flavor.

  • This dish should be the last dish prepared before sitting down to the table because it only takes a few minutes to sautée before serving.

  • Pair spinach with foods rich in vitamin C like lemon juice, bell peppers, oranges, or tomatoes in order to help your body absorb more iron.
