Sautéed Spinach

Ingredients
1 lb fresh spinach (baby or regular)
1–2 tbsp olive oil or butter
2–3 cloves garlic, thinly sliced or minced
Salt, to taste
(Optional) Squeeze of lemon juice or pinch of red pepper flakes
Instructions
Prep the spinach: Rinse the spinach thoroughly and shake off excess water
Heat the pan: In a large skillet, heat the olive oil (or butter) over medium heat.
Add garlic: Sauté garlic for about 30 seconds, until fragrant but not browned.
Add spinach: Add the spinach in batches, stirring as it wilts. It will shrink dramatically in volume.
Season: Once wilted (2–3 minutes), season with salt. Toss to combine. Serve immediately.
Chef Notes:
Add a squeeze of lemon juice or sprinkle of red pepper flakes for brightness and flavor.
This dish should be the last dish prepared before sitting down to the table because it only takes a few minutes to sautée before serving.
Pair spinach with foods rich in vitamin C like lemon juice, bell peppers, oranges, or tomatoes in order to help your body absorb more iron.
