Chicken and Stars Soup

This one’s pure comfort in a bowl. Slow-simmered roasted chicken. Celery, onion, shredded carrots. Fresh parsley. Reserved chicken stock from a previously roasted chicken. (I froze the juices from the previously roasted chicken) Star noodles. And that signature depth from Detweiler’s Farm Dust seasoning and Better Than Boullion.


Simple ingredients. Big soul.This is the soup you make when you want the house to smell like home.


Made with:

  • 1/2 roasted chicken

  • 2 stalks celery

  • 1/2 yellow onion

  • 1/2 bag shredded carrots

  • large handful of fresh parsley

  • chicken stock from 1 roasted chicken + 64oz water (chicken is roasted with Farm Dust, can be found on Amazon)

  • one heaping scoop of Better than Boullion

  • 1 tsp. celery seed

  • 1 tsp. Detweiler’s Farm Dust

  • salt & pepper to taste

  • star noodles (Cook noodles separately using the instructions on the package, 6–8 minutes. Add noodles before serving.)


Instructions

  • Bring the pot to a light boil

  • Reduce heat to a steady simmer

  • Add noodles before serving.


Vegetable cook times:

  • Onion: 8–10 minutes

  • Celery: 10–12 minutes

  • Shredded carrots: 6–8 minutes

  • Parsley: add in the last 1–2 minutes
