Balsamic Maple Syrup Dressing

Ingredients
1 cup olive oil
1/2 cup balsamic vinegar
1/2 cup pure maple syrup
1/2 tsp kosher salt (adjust to taste)
1/4 tsp fresh cracked black pepper
Optional:
1 tsp Dijon mustard (for emulsifying + depth)
1 small garlic clove, minced

Instructions
In a bowl or mason jar, combine balsamic vinegar and maple syrup.
Whisk in Dijon (if using), salt, and pepper.
Slowly drizzle in olive oil while whisking continuously to emulsify.(Or seal jar and shake vigorously.)
Taste and adjust. Add more maple for sweetness or vinegar for brightness.
Storage
Refrigerate up to 2 weeks
Bring to room temperature and shake before serving
